Mexican Tuna Salad
Ingredients:
- 1 6 oz. can chunk light tuna in water, drained
- 1 green bell pepper, minced
- 2 scallions, minced
- 1/4 cup prepared green salsa
- 6 pimento-stuffed olives, chopped
- 2 tblsp. mayonnaise
- 1 tblsp. lime juice
- 1/2 tsp. ground cumin
- pepper to taste
SERVES approx. 2
Combine tuna, bell pepper, scallions, salsa, olives, mayonnaise, lime juice, cumin and pepper in a bowl. Mix with a fork and serve.
