Tomato and Cucumber Salad
Ingredients:
- 3 large tomatoes, chopped
- 3 large cucumbers peeled, halved, seeded, and sliced
- 1 large sweet onion, halved and thinly sliced
- 1/2 cup olive oil
- 3 tbsp. mayonaise
- 2 tbsp. rice vinegar
- 1 tbsp. Dijon mustard
- 1 clove garlic, minced
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 cup crumbled feta cheese
SERVES 10
In a large bowl, combine tomatoes, cucumbers, and onion. In a small bowl, combine the oil, mayonnaise, vinegar, mustard, garlic, salt, and pepper. Pour over tomato mixture and toss gently to coat. Sprinkle with feta cheese.
