Apple and Pear Salad
Ingredients:
- 2 tblsp. red wine vinegar
- 2 1/2 tblsp. orange juice
- zest from 1 orange
- 1/2 cup raisins
- 4 apples, cored and cubed
- 2 pears, cored and cubed
- 2/3 cups of toasted walnuts, coarsly chopped
- 2 tblsp. extra virgin olive oil
- Salt and pepper to taste
SERVES 6
In a large bowl, whisk together vinegar, orange juice, zest and raisins. Add the apples, pears and walnuts to the bowl and drizzle with olive oil. Toss well to combine. Season with salt and pepper. Refrigerate 1 hour before serving.
